Sometimes you may have to give a student a unique due date for an assignment. To do that in Canvas you must create another assign option in the material's settings.

Sometimes you may have an assignment, quiz, or discussion set to close for submissions on a certain day. If you want to allow a student to submit after that date you will need to unlock it for them.

When students are taking quizzes/tests you may need to give a student extra time or an extra attempt. In Canvas, you can use the Moderate This Quiz tool to do all of this.
